Today I am helping you get ready for 5 de Mayo with this Cinco de Mayo tamales recipe. We celebrate this date in honor to the victory of the Battle of Puebla that took place on May 5, 1862.

How to Make a Perfect Pork Tamales Recipe

Filling Ingredients for 2 Dozen Tamales

  • 2 cups of pork cooked and shredded
  • 1 large tomato diced
  • 1/2 cup cilantro chopped
  • 1/2 cup diced red onion chopped
  • 1 fresh chile ancho, seeded and chopped
  • 1 serrano pepper, seeded and chopped
  • 1 teaspoon of salt
  • 24 cornhusks soaked in hot water

Masa

In a large bowl, place cooked meat, tomato and mix. Add cilantro, onion, serrano pepper and salt and mix until blended.

You can use conventional dough but I recommend you to make hot and spicy tamale dough. Here is how:

  • 2 cups of masa harina
  • 2 cups of chicken stock or beef stock or warm water
  • 1/2 cup of vegetable oil or corn oil
  • 2 chile de arbol ground
  • 1 Tbs garlic powder
  • 2 Tbs chili powder
  • 1 Tsp salt
  • 1 Tbs baking powder

Preparing the Masa

  • Mix masa harina and stock until you get the right dough consistency
  • Measure oil in a large cup, add chile de arbol, chili, garlic and salt
  • Mix until ingredients dissolve in the oil
  • Add oil mixture to masa and mix all ingredients thoroughly
  • Add baking powder then let it rest for 5 minutes
  • Spread on the silky side of the cornhusk
  • Fill with the filling
  • Roll by folding long side over meat, tuck tip inward and roll over
  • Steam cook in tamalera for 30 minutes
